Ruth Ukkelberg, 101 of Clitherall died Tuesday, May 24, 2011 at the Broen Memorial Home in Fergus Falls.
Ruth Ukkelberg was born on February 1, 1910 in Stillwater, Minnesota the daughter of Earnest and Nellie (Richards) Heifort. She attended a small country school near Stillwater. In 1927 she graduated from the School of Agriculture at the University of Minnesota in St. Paul.
On October 27, 1928 Ruth was united in marriage to Clifford Ukkelberg. They farmed for over thirty years in Nidaros Township on the Ukkelberg Family Farm. Their son, Harold took over the farm, Clifford and Ruth then moved to a farm in Girard Township where they resided for twenty-five years before moving to a home in Battle Lake. Ruth beautified their farm with acres of flowers and strangers would drive in their yard to observe her flower gardens. She was an avid baker and won several awards for her pie baking including being named the "Custard Queen" of Minnesota. For many years she ran a jelly shop out of her garage where she sold homemade jams, jellies, crafts and garden produce. She is remembered by many who benefited from her leadership in 4-H. Ruth taught a younger generation how to cook, garden, sew and show farm animals. Ruth's lefse recipe has made that Norwegian delicacy accessible to many aspiring Scandinavian cooks. She has been a long-time member of the Nidaros Lutheran Church, where she spent many hours as a real Lutheran Church Basement Woman. Ruth was a member of the Dazzling Daisies Garden Club, the Nidaros Neighbors Homemakers and the Battle Lake Senior Citizens where she taught Hardanger to the other members.
Ruth is survived by two daughters, Thelma (Leonard) Monke and Lois Goebel and by one daughter-in-law, Jan Ukkelberg all of Clitherall; eight grandchildren; twenty-four great-grandchildren; four great-great grandchildren; one sister-in-law, Alice Helland of Valley City, ND and by numerous relatives and friends. She was preceded in death by her husband, Clifford; one son, Harold; one infant daughter; one son-in-law, Earl Goebel, four brothers and by one sister.
Funeral Service: 2 pm, Monday, May 30, 2011 at the Nidaros Lutheran Church, rural Clitherall
